Gluten-free Elisen Lebkuchen, an utterly nutty Lebkuchen.
This most valuable German Lebkuchen is not bulked up with cheap flour but contains bags of nuts: hazelnuts, walnuts and almonds as well as honey, sugar, eggs and Christmas spices.
Originally baked in medieval monasteries on communion bread, (oblaten, non stick paper of its time) the recipe has not changed a lot and is still today baked on oblaten, or edible paper which is just a part of the Lebkuchen.
Shelf life of six months.




Walnuts, hazelnuts, almonds, egg, honey, sugar, brown sugar, orange/lemon peel, almond extract, dark chocolate (cocoa powder, cocoa butter, sugar, sunflower lethitin. Traces of milk) raising agent: ammonium bicarbonate, Christmas spice (cinnamon, clove, cardamom, coriander, ginger, mace, nutmeg, aniseed, star anise, fennel)
