Traditional french madeleines with a touch of Ooh la la!

Founder and pastry chef Hélène Bataille recreates the irresistible regional cakes using a closely guarded family recipe.

Hélène spent her childhood summer holidays with her grandparents in a small, little house in the middle of the woods in the North-Eastern French region of Lorraine.   Along with her siblings she would spend her days playing and laughing, and looking after her grandmother’s hens: Jeanette and Pierrette. Every afternoon they would run to the hen house to collect the eggs, and proudly carry them back to her grandparents’s kitchen.   These fresh eggs meant one thing: ‘Madeleines’!  Fresh eggs, you got it, is one of the secret ingredients.

Now Hélène bakes her madeleines true to her grandfather's recipe.
