Our Great Taste Award winning English Coppa is a crowd-pleasing, moreish, savoury ham from the shoulder of heritage breed pigs. Slowly dried after curing in a subtle blend of herbs and spices, it does everything, goes with everything and is the simple, secret favourite of many-a-charcutier.
Meatier than ham or lomo, coppa’s cult following is well deserved. Ours is from ex-breeding sows, meaning a source of meat that would otherwise not be used (or used very well), reaches exalted status, with the larger size of the pieces allowing us to mature them for longer and develop greater flavour.
A 60g sliced pack will serve two as part of a grazing board, salad or sandwich, or will make a raft of canapes. If serving alongside other meats on a board, one pack will go between three people.
Our English Coppa can be stored ambiently, but keep it in the fridge if you can. Serve at room temperature, having opened the pack a few minutes before removing from the packaging. Once opened, you can wrap in clingfilm or pop in a sealable bag and keep in the fridge for up to a week.
