Our Great Taste Award winning Hogget Bresaola is a lean, serene dream of rich, tasty hogget, cured in herbs the animals graze in the flower meadow. The natural alchemy of ingredients, place and space create an eating experience that is simply right: the way things should be. Soft-textured, low fat, a great partner for sheep's cheese and a pinot noir or a BBQ wine.
What’s hogget? Why, a sheep between one and two years, you know. We find that being a little older, our pasture-fed, heritage breed beauties have more flavour from the delicious wild herbs they’re grazing. The bigger animals suit our purpose better too, being better suited to slow drying. More than that, coming from just 2-3 miles down the road and living a longer life on the pasture, we just think this is the way it should be.
Each sliced 60g pack will serve two as part of a charcuterie selection, salad or sandwich. It will go further on canapes and make a good main course for one as a carpaccio.
Store our hogget bresaola ambiently, or in the fridge if you prefer. Get it to room temperature before serving, to release the flavour. Once opened, you can wrap in clingfilm or pop in a sealable bag and keep in the fridge for up to a week.
