A Great Taste Award winning salami born of a craving for cocktails. Wild fallow venison from around Marlow and High Wycombe is combined with brown sugar, whisky and bitters. The whole thing is smoked, because why wouldn't it be, and a twist of citrus completes a thoroughly unusual, thoroughly sophisticated proposition.
Nobody else makes this salami or anything like it. It’s unusual in the best way, and has to be tried. More than anything else, it’s a partner for refined drinks. Think whisky, dark or barrel-aged rum, sherry or perhaps port, paired with a few slices of our Venison Old Fashioned as a laid-back tapas from the old school. Before fancy canapes, there was something like a piece of bread to soak up the drink. Here, you have a bit of subtly salted meat, with a flavour profile which will elevate both the drink and its accompaniment. It makes for magical combinations.
A 60g pack will serve two as part of a charcuterie board, or put three slices or so on the side of around seven or eight drinks.
Our Venison Old Fashioned can be stored ambiently, but if you have the chance to keep it in the fridge, you might as well. Get it to room temperature before serving, to release the flavour. Once opened, you can wrap in clingfilm or pop in a sealable bag and keep in the fridge for up to a week.
