CHIPOTLE CHILLIES 40G

Chile Chipotle is a medium-hot, smoke-dried jalapeño chilli.

Small, thick-fleshed chipotle chillies are one of the most popular and well-known Mexican chillies, with a unique smokiness and depth of flavour that works particularly well with anything slow-cooked.

Deep maroon colour Wrinkly + high flesh to skin ratio

Notes of: wood smoke + Molasses 

Serving Suggestion: Blend soaked chipotle chillies with garlic, oil, sugar and salt to taste then gently fry to make a smoky-sweet salsa negra.

 

HABANERO HOT SAUCE - MEXICAN TABLE SAUCE

An extremely hot sauce made from fruity habanero chillies with a touch of allspice. The floral-flavoured habanero is the king of chilles and gives this sauce a searing but short-lived heat – you may find it addictive. 

Serving Suggestion:

Ready to eat. Trickle over eggs, avocados, fluffy baked potatoes and grilled meat and fish; stir into soups and stews; or mix a few drops into a Bloody Mary. A little goes a long way. 

 

SMOKED PAPRIKA POWDER 60G

Sweet smoked paprika made from dried ground smoked Spanish peppers. Bright red paprika powder has a distinctive smoky sweet flavour. Use to season soups or stews, or sprinkle over roasted vegetables or fried eggs.

Serving Suggestion:

Mix smoked paprika powder together with salted butter until well combined and slather over just boiled corn on the cob; peel and chop potatoes into small cubes, parboil and then fry in oil until crisp, seasoning with smoked paprika powder and sea salt.

 

MEXICAN OREGANO 25G

Mexican Oregano is an aromatic and spicy cut leaf dried herb. Native to México, this distinctive herb is related to verbena and has a citrus flavour that is very different from Mediterranean oregano.

Serving Suggestion:

Blend a little Mexican Oregano together with garlic and salt to make a paste. Use this as a rub for meat or fish, or add to oil and vinegar to make a dressing for salads and vegetables.

 

HIBISCUS FLOWERS 50G

Dried Hibiscus Flowers – infuse to make flavoured water or tea.Known as ‘flor de Jamaica’ in México, this dried flower has a tart flavour similar to cranberry. It is most often used to make the refreshing drink, agua de Jamaica, a ruby coloured agua fresca.

Serving Suggestion:

Agua de Jamaica makes a delicious syrup for hibiscus margaritas. Add 200g sugar and 350g agua de Jamaica to a pan and simmer until syrupy then leave to cool. For one margarita, add 25ml syrup, 25ml lime juice, 50ml 100% blue agave tequila and plenty of ice to a cocktail shaker. Give it a good shake, pour into a chilled glass and drink immediately!

Ingredients:

Hibiscus Flowers

To make agua de Jamaica, add 50 g hibiscus flowers to 1.5 litres of boiling water in a large heatproof jug or container. Stir in 125-150 g of sugar, depending how sweet you want it, until dissolved. Cover and chill in the refrigerator overnight, then strain into glasses over ice before serving.Store in a cool and dry place. Avoid exposure to light.

Chiptole Chile

Lightly toast then rehydrate chipotle chillies to release their flavour. First, wipe clean and remove their stems and seeds. Toast briefly in a dry pan on a medium heat until fragrant then soak in just boiled water for 15 minutes. Drain and blend to a paste with a splash of water before using. Always wash your hands after handling chillies! Store in a cool and dry place. Avoid exposure to light.
