With a milky-buttery taste and a spiced aroma, this semi-hard cheese is made from 100% cow's milk from the pastures of the South Tyrol and refined with spices that are traditionally used to make the traditional South Tyrolean flatbreads including anise, caraway and fennel. During its three-month maturation on spruce boards, the cheese is turned every other day and washed with red cultures.
