A flagship cheese with traditional heritage from Campania, this aromatic, golden brown semi-hard cheese from cow’s milk is aged for around 4 months, its layers developing through the maturing process. It has a sharp taste with a hint of chestnut and musk. Formed by hand into a pear shape it is tied with characteristic hemp string.
In the heart of Campania is a land rich in the tradition of milling and the historic creation of the Mediterranean diet. Four generations of dairy farmers form part of this history at our artisan cheesemaker, where natural caves are used for ageing their cheeses, following historic recipes and traditions. These natural caves provide a hermitage for the long maturing process of the most precious cheeses.
