All Forman’s smoked salmon is hand-sliced the day we dispatch it and is presented in beautiful gift packaging. Harry Forman, our founder, devised the famous London Cure – applied to Grade One Scottish farmed salmon – it is deliberately subtle so you can taste the wondrous, melt-in-the-mouth flesh. We only use rock salt and oak smoke, nothing else. Perfection.
The recipe for H. Forman & Son London Cure Smoked Salmon has not changed iun over a century. No additives, no brine, no nonsense. It's a true gourmet food that enjoys protected geographical indication (PGI) Status - the first London delicacy to do so - and is generally regarded as the finest smoked salmon money can buy.
Hand-carved: we use Grade one farmed salmon from Scottish Lochs, which is carved by hand the day of dispatch to ensure superior freshness, flavour and texture. We kiln dry our salmon allowing smoked produced by friction burning whole oak logs to circulate and stick to the flesh creating a preservative seal. Our experts remove this chewy pellicle and any brown meat before carving so the smoked salmon you serve is always luxuriously soft and pink.
