Kala Namak, also known as 'Himalayan black salt', is a kiln-fired rock salt with a sulphurous, pungent smell mined in the regions surrounding the Himalayas of Nepal. It is used widely in South Asia & has an unmistakable pungency & taste due to its naturally high sulphur/sulphite mineral content. It also has naturally high concentrations of magnesium & iron.
Kala Namak is especially popular with vegans or those avoiding animal products because its sulphur smell & taste makes a wonderful substitute for egg & makes great scrambled 'eggs' using tofu instead. Once cooked, the flavour becomes milder & not so 'eggy'.
Traditionally, the salt is transformed from its relatively colourless, raw natural form by firing the harvested raw salt rocks in a kiln for 24 hours, sealed in a ceramic jar with charcoal & small quantities of seeds & bark. The fired-salt melts, the natural chemical reaction occurs & the salt is cooled, stored & aged for the flavours to develop. Almost black in rock-form, ours is finely ground with no additives for convenience. Once ground, the once-black salt rocks become more of a pinky colour.
With it's rich, almost-smoky, 'volcanic' taste, Kala Namak is especially popular in Indian cuisine, especially North Indian cooking & is widely used in making salt blends like chaat masala, potato chaat or chaat puri.
For a delicious vegan scrambled 'egg' dish, use this simple recipe:
- use a block of firm tofu, drained & broken into small chunks with your fingers or a fork
- heat in a frying pan with a drizzle of Rapeseed oil, add 1 tsp of Curry Powder, 1/2 tsp Turmeric & a good pinch of Kala Namak
- stir well to coat everything in the spices whilst gently heating for 6-7 mins, then serve!
This works as a tasty filling for wraps or with avocado.
Kala Namak is also considered a 'cooling spice' in Ayurveda, used as a laxative & digestive aid.
