Based on a traditional Malaysian family recipe, this satay sauce is made with roasted peanuts that are ground, and fried with a paste made from shallots, galangal, chilli and of course a hint of tamarind and lime.
It's a simple way to pep up your choice of protein, drizzle over a salad or to use as a dip for veggies.Of course it also goes perfectly with satay chicken skewers - which is a recipe we all love at home, but you can also use it as a stir fry sauce, or use it to make a traditional Indonesian salad called Gado Gado, which is a salad of raw, slightly boiled, blanched or steamed vegetables, boiled potato, fried tofu and tempeh.
