Blueberry Acai Smoothie Bowl

I love making healthy smoothie bowls and nice cream for breakfast and I always have a stash of frozen banana’s in my freezer to blitz up with my favourite fruits. To make them even healthier I like to add some plant based protein like seeds and nut butters, some greens and superfood powders to give them an extra nutritional boost. My favourites are maca, baobab and acai.

I discovered acai on holiday in Brazil a few years ago and became instantly addicted to the acai bowls topped with granola you can get out there. They were so delicious and super healthy. Thankfully you can now get acai powder pretty easily so I can recreate acai bowls whenever I like.

Here’s my recipe for my Blueberry Acai Smoothie Bowl:

Ingredients:

  • 1 large frozen banana
  • ½ cup blueberries
  • 1 medjool date
  • 1 tbsp almond butter
  • 4 acai powder capsules – I use Organic Burst
  • Splash almond milk


Topping

  • Chia seeds
  • More berries


Directions

  1. Pop everything into a high-speed food processor and blitz until smooth and creamy.
  2. Top you your favourite toppings; berries, seeds, chia, buckwheat, granola.
