1. Sweet Potato Brownies
The most popular recipe reinvented time and time again at the moment has to be the Sweet Potato Brownie - and why not? Finally a healthy alternative to a classic indulgence which technically counts as 1 of your 5-a-day, and it’s even easier to make than the norm. Boil 1 1/2 Sweet Potatoes until softened, combine with 150g gluten free flour and 60g of dairy free butter, mix in 60g of melted dark chocolate (72% or higher) with a splash of nut milk to loosen the texture to taste. Pop them in the oven for 15 minutes at 180 degrees celsius and hey presto, super delicious rich brownies!
2. Vegan Bolognese
My go to comfort food that’s quick to whip up mid week has to be Bolognese, even better now I have a vegan alternative! I like to use shredded mushrooms as my ‘meat’ as it really mimics the texture of mince, and for a great bit of bulk to sink you down into your chair is the addition of Sweet Potato. Dice up 2 potatoes with 2 red onions, add in some peppers, tomato sauce, lots of garlic and balsamic vinegar, quinoa for protein and substance and leave it all to mellow in a pan. One hearty meal that will go down a storm at any dinner table!
3. Moroccan Harissa Enchiladas
When I discovered both enchiladas and Moroccan Harissa, I knew they were destined to be put together for one almighty Friday night treat. As a vegan, I’m slightly lacking when it comes to bulking out a fajita wrap so instead of chicken I reached for the trusty Sweet Potato and you best prepare to have your mind blown. 1 potato marinated in Harissa and mixed with peppers, tomato sauce, nutritional yeast, garlic, 4 onions and then wrapped in some wholewheat wraps and topped with dairy-free cheese sauce is absolute heaven on a plate. It may take some time to cook them and assemble but you will be left ‘mmmm-ing’ and ‘aaaah-ing’ for hours after.
