Healthy Courgette Fries

Courgette (or zucchini if you are from the other side of the pond) is a vegetable that I feel gets a bad rep. They are so easy to cook, so verstaile and so delicious. They pack way more of a nutritional punch than the humble potato - packing in more iron, Vitamin A and potassium - and for less calories than potato gram for gram. The bitter taste has put off generations of fussy eaters (including a young me!)

This is one of my favourite recipes - because it is so simple and so versatile. I'll give you the base recipe first and then list a few variations and alternatives that you can do - this is definitely one health hack recipe you can have in your back pocket! Simply make more or less depending on how many people you want to feed. I usually use 2 courgettes per person if eating these with a main meal. 

To make your healthy courgette fries: 

Chop the courgette into long thin strips (don't peel - this will protect the flesh and make the "fries" extra crispy). Coat the courgette in oil (olive oil works best, then sunflower - coconut oil leaves a weird taste in my opinion). Bake for 40 minutes at Gas Mark 6 until crispy and golden brown. 

Verstaile? Yes! Try these variations to mix things up:

  • If you are feeling a little wicked, these are especially delicious if you mix salt and pepper in with the oil.
  • If you are feeling more adventurous, add a coating of breadcrumbs as well as the oil for an even tastier treat. Add Parmesan to the breadcrumbs for an extra kick. 
  • If you want to make these look like authentic fries, make a batter of one and a half tablespoons flour and one tablespoons oil, to make a simple batter. You can add Parmesan to this batter too. 
  • Last little bonus: courgettes are fool proof to grow. My Grandmother grew some amazing courgettes with my little cousins (ages 11 and 6) this summer - easy, organic and "grown with love."
