Healthy Mint Choc Chip Ice-Cream Sundae

It's so satisfying to make something so sweet and delicious out of purely plant based ingredients, and this has to be one of my favourite recipes to date: Mint Choc Chip Ice Cream Sundae - wowzer! Made with superfoods such as Avocado and Wheatgrass, this sundae not only tastes absolutely delicious, but it will leave you feeling refreshed and energised. 

Have it for dessert, lunch or even for breakfast, it's completely guilt free.

Ingredients: 

For the ice cream:

  • 5-6 frozen bananas
  • A handful of fresh mint
  • 1 tsp of wheatgrass (I like Naturya)
  • A handful of kale
  • Half a cup of Unsweetened Almond Milk
  • A quarter of an Avocado

For the chocolate:

  • 1 tbsp Raw Cacao Powder ( I like Creative Nature)
  • Half a cup of Coconut Oil (I like Lucy Bee)

Toppings:

  • Hemp Seeds (I like Creative Nature) 
  • Raw Cacao Nibs (I like Nature)
  • Fresh Mint Leaves

Method:

Mix the ice cream ingredients together in a blender until quite thick - add more or less of the ingredients until you reach the right consistency. Pour a small amount of the chocolate mixture on top of the ice cream and freeze for fifteen minutes or so (in doesn't need very long because the Coconut Oil sets really quickly)

Next, add another layer of Mint Ice Cream until you reach the top of the jar and then pour little bits of the chocolate sauce over the top, along with the other toppings and freeze for a few minutes then remove from the freezer.
