Sugar-Free Apple Crumble
If there was one dessert I was good at making when I was a child it was definitely apple crumble. Apple crumble is one of my favourite sweet treats and it’s an incredibly comforting dish. I admit that it took me a while to perfect a vegan, gluten-free and refined sugar-free apple crumble but I managed it in the end and it definitely doesn’t disappoint!
Ingredients
(Serves 4-6)
- 4 eating apples (I use Pink Lady apples)
- 1 tablespoon cinnamon
- 1 ½ cups (210g) rice flour
- 1/2 cup (100g) coconut oil (soft but not liquid)
- 1/2 cup (50g) rolled oats
- 1/4 cup (4 tablespoons) liquid sweetener
Method
Preheat your oven to 180°c (350°f). Peel the apples then chop them into bite-sized pieces and place them evenly at the bottom of a large baking dish. Sprinkle the cinnamon over the apple chunks.
Place the rice flour and coconut oil into a large mixing bowl then rub them together with your fingertips until a mixture that looks and feels like breadcrumbs is formed.Add the oats and liquid sweetener to the mixing bowl and mix everything together. Pour this mixture over the top of the apple chunks, making sure it’s smooth on top. Place the baking dish on the top shelf of the oven and bake the crumble for 40 minutes or until it’s golden brown and slightly crispy on top.
Serve it fresh out of the oven or store it in the fridge to enjoy later!
