Best-Ever Granola Recipe

When I used to hear people say that they made their own granola, to me they were instantly revered as a domestic goddess - who has the time to bake their own granola, and also how on earth do you even make it!? 

Well things sure have changed since then and I'll let you in on a little secret - you can knock up a huge batch of granola that you can enjoy all week long in under half an hour. And it's SO easy. And you'll look like a regular Nigella to all your friends and fam. Winning.

This granola is pretty economical; it shouldn't cost you more than a few pounds per batch, and you can use it as a base and play around with the ingredients and flavours to mix it up a bit (see below for some optional ingredient ideas).

I like to make a big old batch of this on the weekend so that I have enough to last me the whole week - it's such a fabulous start to the day as the oats are really filling and full of slow release energy and the nuts and seeds give you lots of protein and good fats and give the granola the perfect crunch. What's also great is that with the maple syrup a little really does go a long way, so you only need a few tablespoons to give it just the right amount of sweetness.

I love this with homemade almond milk, coconut yogurt or fresh berries - or sometimes just on its own with a spoon! I hope you love it too!

Ingredients

  • 2 cups oats
  • 1 cup nuts (I use a mix of almonds, hazelnuts and pecans)
  • 1 cup seeds (I use a mix of sunflower seeds, pumpkin seeds and linseeds)
  • 3 tbsp maple syrup
  • 2 tbsp coconut oil
  • Optional: 1 tbsp cinnamon, chopped dates, raisins, cacao nibs or chocolate chips

Method

  • Pop the maple syrup and granola together in a saucepan, place on a low heat and stir until totally melted.
  • Then blitz the nuts in a food processor for 20 seconds or so until they are roughly chopped.
  • Add all the ingredients into a mixing bowl (N.B. if you are using dried fruit or chocolate chips, simply stir them in at the end as they may burn otherwise) and once all mixed together spoon the granola onto a lined baking tray.
  • Bake at 180 degrees for about 25 minutes, opening the oven to stir every five minutes or so to ensure that it all bakes evenly.
  • Once it's all lovely and golden, add in any extra ingredients and store in an airtight container at room temperature.
