Spiced Apple Crumble Squares

These substantial squares are absolutely ideal if you love traditional apple crumble but fancy something a little bit different. An almond scented biscuit base with a chunky topping of spiced apples, topped with a crunchy oat ‘crumble’, these are ridiculously moreish and certainly fill the gap mid-afternoon or as a dessert. Made using date syrup (I used Beloved), you can be assured they are free from refined sugars, packed with protein and healthy fats, and contain only clean ingredients. What’s not to love?

Ingredients:

For the base -

  • 1 cup coconut flour
  • 2 tbsp chia seeds (I used Kaizen Living)
  • 1 scoop vanilla protein powder (I used PhD Nutrition)
  • 25g ground almonds
  • 2 tbsp date syrup (I used Beloved)
  • 2 tbsp coconut oil (I used Lucy Bee)
  • 1 egg, beaten
  • ½ tsp almond extract

Preheat the oven to 190 degrees C and grease and line a baking tray with greaseproof paper. Mix together all of the dry ingredients in a large bowl. Melt the coconut oil and date syrup in a small pan on a low heat, then add to the bowl along with the egg. Stir well until the mixture starts coming together. Tip into the tin and using your hands, press it so it covers the base and is evenly spread. Bake for 10 minutes.

For the apple filling -

  • 1 can of cooked unsweetened apple slices (+ an extra ½ can)
  • 1 tbsp Beloved date syrup
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg

While the base is cooking, simply mix together all of the ingredients - but set aside the other ½ of the apples from the new can. Blitz these up so you have more of a puree as well as chunks, mix this together. Remove the base from the oven (this should just be turning golden brown) and spread the apple mixture to cover.

Flapjack topping:

  • 1 cup rolled oats (I used Mornflake)
  • 2 tbsp coconut oil, melted
  • 2 tbsp Beloved date syrup
  • 2 tbsp flaked almonds

Simply melt the coconut oil and date syrup over a low heat, then add to the dry ingredients and stir until you have a sticky oat mixture. Spoon this all over the apples and return to the oven for about 10 minutes until golden. Leave in the tin for about 30 minutes.

Ready to indulge innocently? Cut into 12 generous squares and carefully remove from the tin - now enjoy warm or when completely cooled down. Yummy!
