If I told you, you could have ice cream for breakfast you would tell me to shut up! Well today you can have ice cream and it's healthy and delicious. Its nutty and flavoursome and my favourite breakfast to date.
- 1 1/2 frozen bananas
- 2 Tsp Almond Milk
- 1 handful of granola (I use Rude Health)
- 2 Tbsp of flaked or desiccated coconut
- 1 Tsp of almond butter (I use Meridian)
- Handful of dried berries and nuts. I used sultanas,cranberries,blueberries, flaked almonds, hazelnuts and pistachios.
Put the banana in a blender and blend until smooth, add in some almond milk to help this. Keep blending - it does take a few minutes but it will soon resemble ice cream. Put this in a bowl and add the rest of the ingredients. Voila - ice cream breakfast!
You can make extra of the banana ice cream and keep it in a container in the freezer for about 2 weeks. Perfect if you have some ripe bananas that need to be used.
