Coconut, Almond and Apple Oats

The lure of this sweet, creamy porridge is guaranteed to get even the sleepiest of heads out of bed in the morning. Don’t fancy a hot breakkie? Mix together all of the ingredients and leave in the fridge overnight for a delicious jar of overnight oats, perfect for a busy bee on the go.

Ingredients:

  • 50g rolled oats
  • 150-200ml unsweetened almond milk, depending on how you like your porridge consistency
  • 3 tbsp coconut milk
  • 1 red apple
  • Handful of blueberries

Method:

  • Weigh out your portion of oats and add to a saucepan, mixing in your unsweetened almond milk on a medium heat
  • Grate an apple and add into your oaty almond mix, followed by 3tbsp of tinned coconut milk
  • Leave over a medium heat for approx. 5 mins, depending on how you like the thickness of your porridge
  • Pour into a big bowl or mug and top with your favourite flavours. I used blueberries, but cashew or almond butter with a sprinkling of seeds would be delicious too. Enjoy!
