Yummy Chocolate Brownies (Gluten, Dairy and Refined Sugar Free)
After free from week on the GBBO quite a few people were saying that it's impossible to have a tasty gluten, dairy and sugar free cake. I beg to differ! It does take the use of a few carefully selected ingredients, but these brownies are very tasty and happen to be free from gluten, dairy and refined sugar.
There is some rather fab dark chocolate to choose from on Yumbles. You could even go for a flavoured chocolate...
Yummy Chocolate Brownies
Ingredients:
- 100g 70%+ dark chocolate (sugar free if desired)
- 50g coconut butter or oil
- 80g ground almonds
- 80g coconut sugar (or try your natural sweetener of choice)
- 2 eggs
- 100g roughly chopped walnuts
Method:
Pre-heat the oven to 180C and grease a loaf tinMelt the coconut butter and chocolate by placing it in a bowl suspended over simmering waterOnce melted allow the chocolate mixture to cool a little and then add the almonds, coconut sugar and egg yolks. Mix well until fully incorporated. Stir in the walnutsWhisk the egg whites in a scrupulously clean bowl/whisk until they form stiff peaks. Gently stir them into the mixture.Pour into the pan and bake for 25-35 minutes until just firm to the touch.
Notes:
ALLERGIES// Contains nuts and egg. Gluten free. Dairy free. Soya free. If you're on a low FODMAP diet almonds are moderately high in FODMAPs so only eat a small slice or substitute for a different ground nut e.g. pecans
STORAGE// If they last that long they will keep in an airtight container for a few days and can be frozen. The recipe easily doubles.
