Grown Up Soup: Gazpacho

I had the absolute joy of spending the summer in Ibiza and the temperatures soared leaving us all hot and sticky. It was on one of these days that I decided the time had come as a fully fledged grown up to try cold soup, Yes I'm talking gazpacho. Well I have to say I was pleasantly surprised. Yes it was cold, but also refreshing and cleansing, there was no need to dip chunks of bread as you just don't need to. So the first thing I did on my return was to recreate this lovely recipe, even though the weather is some what colder here.
Ingredients:
- 6 big fat round juicy red tomatoes
- Half a cucumber peeled
- Half a red pepper deseeded
- 1 large garlic clove
- Salt and pepper to taste
- A good glug of olive oil
Method:
Put into a blender and blitz until smooth then chill for at least 2 hours before serving.I like to serve it in a glass as it looks pretty with a basil leaf or a slice of cucumber on the side of the glass.
There is so much goodness in this soup too, mainly beause all the indredients are uncooked they retain far more nutrients than cooked soups giving you a good vitamin kick as well!
