Seaweed Superfood Salad

Seaweed is having a bit of a moment right now, with Jamie Oliver flying the flag for this nutrition-packed superfood. It's easy to dismiss seaweed as an exotic, trendy ingredient, but it's actually been harvested from the shores of Britain for centuries (particularly Scotland, Wales and the North East). Who'd have thought the new darling of the health world is actually a heritage British food?!

Seaweed is packed with essential minerals and vitamins, including iodine, calcium and Vitamin K. Jamie Oliver calls it the most nutritious vegetable in the world and is quoted as saying a diet rich in seaweed helped him lose weight earlier this year. High praise indeed! Although it is possible to buy fresh seaweed here in the UK, it's easier to find dried, powdered seaweed which is available all year around. Seaweed has a savoury, umami taste and acts as a natural flavour enhancer when used in cooking. 

Yumbles maker Mara Seaweed sent us this recipe by Angus Bremner, which we thought we'd share with you for British Food Fortnight. It makes for a delicious, nutritious lunch - packed with vitamins, minerals and essential amino acids. Enjoy! 

Ingredients:

  • Mixed salad leaves
  • Watercress
  • Long stem broccoli
  • Broad beans (frozen and thawed is fine) 
  • Quinoa
  • Sprouted mung beans and alfalfa seeds

For the dressing:

  • Sesame oil
  • Olive oil
  • White wine vinegar
  • Juice of an orange
  • 1tsp mustard
  • 1 clove of garlic, crushed
  • Pepper
  • 1 tbsp dulse 
  • Tiny pinch of salt

For the seed topping:

  • 1 tbsp dulse
  • 2 tbsp pumpkin seeds
  • 2 tbsp sunflower seeds
  • 2tbsp linseeds
  • 1tbsp black sesame seeds
  • Splash of soy sauce

Method:

  • Steam and blanch the broad beans and broccoli
  • Cook the quinoa and then set it aside to cool
  • To make the seed topping, toast the seeds with the dulse in a dry frying pan over a medium heat for around 3-4 minutes. When they start to pop, add the soya sauce and stir over the heat until the seeds have soaked it up. Then set aside to cool
  • Mix all the ingredients together for the salad dressing with equal parts of the liquids- to taste
  • Wash and spin dry the salad leaves
  • Arrange all the ingredients together and drizzle with salad dressing and sprinkle with toasted seed mix
  • The seed topping can also be stored in a tightly sealed jar for easy topping for salads, roasted vegetables, exotic rice dishes
