What To Do With Kale

Of all the great leafy-greens out there, kale is certainly a winner when it comes to taste and health benefits. Some class it as a superfood and I'd definitely agree! It’s known to be one of the most nutrient dense vegetables in the world, packing in an exceptional amount of vitamins, minerals and antioxidants to send you on your way to a new you. OK so perhaps you won’t see any drastic changes from eating a few handfuls of kale a week, but you will be giving your body a quick boost of much-needed nutrients (including calcium) that many of us are lacking.

Not only is October one of the best months for kale-picking, it’s also home to National Kale Day. Didn’t know there was such a thing? Neither did we until just now, perfect timing though hey! So what better day to start experimenting with the endless list of ways to use kale?

What To Do With Kale:

Kale Chips

Definitely a big hit lately - kale chips are incredibly moreish, take no time at all and will have even kids rushing to eat their greens! Wash the kale, cut away the hard stalks and dab dry with a piece of kitchen paper. Drizzle with coconut oil, garlic, a touch of salt and chilli flakes if you like it hot. Spread evenly on a baking tray and cook in a low oven to keep as many of the nutrients intact as possible (around 40 degrees). Check after ten minutes or so and gives them a shake. Keep a close eye on them because you want them to be crispy, but not burnt! I like to add nutritional yeast flakes for added B vitamins and a delicious cheesy taste: a delicious alternative to crisps. 

Raw Kale

With the boom of raw food diets, kale should be up there as raw favourite. Eating kale raw is the best way to preserve all the nutrients and reap the benefits. Adding sliced and washed raw kale to smoothies is an easy way to consume over 10 vitamins and minerals in one hit! Try adding kale to salads with some lemon juice, salt, pine nuts and balsamic glaze. 

Stir Fry 

Kale keeps it's texture a lot more than spinach, making it a great choice for stir frys and curries. Before I was vegetarian I used to enjoy eating kale stir-fried with sausage meat, chilli flakes and garlic, then served with pasta. Delicious! You can even fry it up with spaghetti bolognese for added nutrients, or serve stir-fried kale with ginger and garlic as a tempting side dish. 

Simmer or Steam 

This is probably the way most of us are familiar with, wash your kale and place it in a slightly salted pan of boiling water, simmer for 6-7 minutes and drain. Don't throw away the vitamin-rich water though - use it as a stock for soups. You can add this straight into your favourite dishes or use as a side for roast dinners. Steaming your kale will retain even more of the green goodness so if you have a steamer, steam away! 

Chocolate Brownies

Believe it or not you can make some damn-good chocolate brownies using kale. A healthy and sneaky way to add nutrients to fool your friends and even kids as you can’t even taste it! There are many different recipes out there but it simply requires adding a few handfuls of kale to the mixture before blending - definitely worth a go.
