Vegan Lemon Cheesecake

I've been experimenting a lot with Tofu lately and I can't believe how good it tastes in desserts! You might be thinking: Tofu in desserts?! Urgh! Well if you're thinking this, think again. Tofu adds a creamy texture and barely any flavour, so it's the perfect ingredient for a cheesecake. In this case I made Lemon Cheesecake because it's one of my favourite vegan cakes.

Ingredients:

For the base:

  • 1 cup of almonds
  • 1 cup of gluten free oats
  • 6 medjool dates
  • 2 tbsp of maple syrup
  • 1/2 a cup of coconut oil

For the top layer: 

  • 100g silken tofu
  • Half a cup of unsweetened almond milk
  • 1 tbsp of agave nectar
  • 3 tbsp lemon juice
  • Zest of lemon
  • 2 tbsp of coconut oil

Recipe:

Mix all of the base ingredients together in a blender then spread evenly on a greased cake tin and freeze for a couple of hours then prepare the topping. Mix the topping ingredients together in a blender then pour it over the base then freeze overnight. Leave in the fridge for half an hour or so then devour.
