Coconut, Raspberry and Acai Berry Mousse

So I was recently lucky enough to be sent some incredible organic Acai Berry powder. If you haven't tried acai berry yet, here are just a few reasons why you should:

  • It's high in Vitamin A, Calcium AND Potassium
  • It's a natural source of Iron
  • It promotes gorgeous radiant skin ... to name a few! 

This powder is so versatile and so easy to slip into so many recipes so I thought I'd throw together this easy superfood mousse which can be enjoyed as a dessert, breakfast or even a snack.  

Ingredients:

  • A tsp Acai Berry powder
  • Half a scoop of The Natural Whey Co Coconut Raspberry powder
  • Half an avocado
  • A medium frozen banana 
  • A tsp coconut oil (I used Lucy Bee)
  • A tbsp agave nectar or sweet freedom  

Method:

  • Mix the powder and whey
  • Blend together the banana, avocado, coconut oil and sweetener
  • Combine the dry and wet ingredients and pop in the fridge to set for half an hour
  • Remove from the fridge and enjoy with your toppings of choice!
