Gooey Baked Christmas Camembert
A Christmas favourite with just about everyone has to be baked camembert. It makes a quick and tasty starter or dipping-dish to share with friends and is always a big hit. It’s super easy to make and is pretty much fail-proof, but there is always room for improvement and ways to impress your guests even more!
It may not be the healthiest dish to indulge in at Christmas, but it definitely isn’t the worst. You can also use brie instead, it’s just always handy to cook in a wooden box that camembert usually comes in - saves all the mess! If not use a small ovenproof dish that fits the cheese as close as possible.
Ingredients:
- 1 Camembert cheese in a wooden box if possible
- 1 tsp of honey
- 1 tsp of olive or sesame oil
- 2 garlic cloves
- Sprigs of thyme and rosemary
- Chilli flakes
- A handful of cranberries (dried is fine)
- A handful of nuts (walnuts, cashews etc)
- Sea salt and black pepper for seasoning
Method
- Preheat the oven to 180 degrees, any higher will just crisp the cheese instead of making it gooey
- Remove any plastic packaging from the cheese and sprinkle the box with water and place the cheese back in the box
- Make small slices at the top of the cheese about half a cm deep and half a cm wide
- Chop the garlic cloves in half and pop into the slices, along with rosemary and thyme
- Drizzle honey and oil on top and season with chilli flakes, sea salt and pepper
- Place in the middle of the oven for 15 to 20 mins, but no longer otherwise it will go hard and you can’t redeem it then!
- Dip in warm, crusty ciabatta bread or any other bread or crackers of your choice. Drizzle with olive oil and pop in the oven 5 minutes before the cheese is ready, along with the nuts to toast. You can also make garlic bread by spreading with finely chopped garlic, herbs and butter - easy as that
- Finely chop the cranberries and toasted nuts and place in a bowl, dip the bread in the cheese then into the cranberry mixture for extra festive flavour
For a gluten free alternative try making crispy courgette fries or sweet potato discs to dip in by roasting in the oven and seasoning with salt, pepper, herbs and olive oil - just as good, and that tad bit healthier, if that counts.
