Clementine and Vanilla Cookies
Cookies are always a winner and taste so much better when they're homemade - providing you don't burn them or make a big hiccup with the recipe. They're also better for you as this recipe cuts out any nasty chemicals or preservatives, plus a hefty amount of refined sugar! The vanilla, clove and nutmeg Spice Drops make this stress-free cooking and as they're highly concentrated spice extracts, a little really goes a long way.
Time: 20 minutes
(Makes 36 cookies)
Ingredients:
- 225g butter, softened
- 175 g dark brown sugar
- 1 egg
- Zest of 3 clementine
- Juice of 2 clementine
- 400g all-purpose flour
- 10 drops of Vanilla Spice Drops
- 6 drops of Clove Spice drops
- 6 drops of Nutmeg Spice drops
Method:
- Preheat oven to 190°C
- In the bowl, cream together butter and sugar until light and fluffy
- Add in the egg and Vanilla, Clove and Nutmeg Spice Drops and mix until combined well
- Add in the juice and zest
- Add in the flour and mix well to combine all ingredients into a smooth dough
- Take a handful of the dough, roll into a log and load into the barrel of a cookie press
- Fit cookie press with desired die, and shoot dough onto ungreased cooking sheets
- Sprinkle with granulated sugar
- Then bake in preheated oven for 7-10 minutes or until the edges of the cookies just begin to brown
- Let cool on cookie sheet for 1-2 minutes, then transfer to a cooling rack to finish cooling
If you don't have a cookie press at home then don't worry, just roll the dough into cookie shapes, or whatever shapes you like! Go for Christmas trees or stars of you're feeling festive, just make sure they are quite flat and follow the rest of the instructions.
