Blinis with Smoked Salmon and Ginger

Although this is an amazing canape great for parties and having friends round, it also makes a light Christmas breakfast/brunch great with a glass of fizz in the morning! Blinis are pancakes after all. Just add a few Spice Drops to enhance the flavour and compliment the salmon with cumin and ginger. It's requires little effort for maximum taste... 

Time: 20 minutes

Ingredients:

(Makes 36)

  • 150g pack smoked salmon
  • 36 blinis
  • 3 tbsp. crème fraiche
  • 4 drops of Ginger Spice Drops
  • 4 drops of Cumin Spice Drops
  • 1 tbsp. chopped fresh dill
  • Dill, to garnish
  • Grated zest of 1 lemon

 Method:

  1. Preheat the oven to 190°C
  2. Warm the blinis according to the pack instructions. You can also warm the blinis on a griddle pan on low heat
  3. Meanwhile, flake the smoked salmon into a bowl, mix in the crème fraiche, chopped dill and Ginger and Cumin Spice Drops
  4. Spoon about a teaspoonful of the mixture on to each blini, then garnish with dill, lemon zest and freshly ground black pepper
  5. Enjoy this simple and easy to prepare canape!
