Festive Apple & Cranberry Spiced Porridge

If you love a comforting, warming bowl of porridge at this time of year and are a fan of sweet Christmas flavours like apples, cranberries and mixed spices, this dish is for you! A delicious combination of creamy oats, juicy cranberries and crunchy walnuts and apple crisps drizzled with a little date nectar to finish off, you’ll easily be going back for seconds. A great dish for Christmas or Boxing Day morning!

Ingredients:

(Serves 2)

  • 1 cup rolled oats (I used Mornflake)
  • 3 tbsp chia seeds (I used Kaizen Living)
  • ½ cup unsweetened apple puree
  • 2 cups almond milk
  • 1 tsp vanilla extract
  • ¼ tsp each of cinnamon, ginger & mixed spice
  • 1 tbsp date nectar or honey (I used Beloved dates)
  • 2 tbsp unsweetened dried cranberries (I used Clearly Scrumptious)
  • 2 tbsp walnut pieces
  • A few unsweetened dried apple crisps (I used Good Health Snacks)
  • A little extra date nectar or honey 

Get making!

  1. Place the oats, chia seeds, almond milk, cranberries and spices in a small pan and bring to the boil. Simmer for about 5 minutes, until the liquid starts to absorb.
  2. Remove from the heat, then stir in the apple puree, vanilla and date nectar and leave for a few minutes.
  3. Now dish out between two bowls and scatter over some walnuts, dried apple crisps and drizzle with a little more date nectar - now dig in!
