What No Meat?! 8 Veggie Christmas Ideas

If there was ever a time to struggle being a newbie vegetarian, then Christmas is most definitely it. Pigs in blankets, goose fat covered potatoes, beef-juice gravy and of course melt in the mouth turkey that only comes round once a year, and yep us veggies can’t touch any of it. But since delving further into tasty vegetarian Christmas ideas I don’t regret my choice, and I’m sure you won’t either after reading these enticing meat-free festive foods!

Even if you’re not a veggie and still love a good beef wellington on boxing day, there’s no Christmas dinner without the vegetables - let’s face it. These festive dishes will even have your Turkey loving guests tucking in...

1. Nut Roast

A classic winter dish with a pretty powerful nutrient count. Nut roast is so versatile and tasty. Recipes vary but a nut roast usually consists of mixed nuts, warming spices and some finely chopped veg (plus I like to make a blue cheese topping with cranberry glaze, delicious!)

2. Wellington

You can fill the puff pastry with whatever takes your fancy, but for me a mushroom, spinach and butternut squash wellington makes for a show-stopping centrepiece - the Turkey has reigned for too long! It looks great and is a pretty hefty main course for anyone, so there’s no need to worry about keeping up with your fellow meat-eaters.

3. Grilled Goats Cheese

This starter beats any prawn cocktail, hands down. Use rounds of goats cheese and cut into 1cm thick slices and place on foil and pop under the grill for 4 or 5 minutes until it starts to brown. You can even deep fry the cheese in flour and egg mixture - but that’s quite naughty! Then glaze with honey and rocket.

4. Stuffed Butternut Squash

A hearty main course full of goodness, and a great one for any health-conscious foodies. Scoop the seeds from the squash and roast it with a little olive oil, rosemary, thyme and garlic for around 45 minutes until soft. Then add a selection of pine or cashew nuts, dried cranberries, feta cheese and quinoa.

5. Super Sprouts

They haven’t got the best reputation and some people stay well away, but sprouts are amazingly good for us and actually taste great when cooked properly. Try part-boiling them until slightly soft then sautee them in butter or oliveoil until they’re crispy round the edges. Toss with garlic, caramelised onions and roasted nuts.

6. Stilton and Walnut Pate

A tasty alternative to chicken liver pate or other meaty combinations, stilton and walnuts really compliment each other and are perfect for Christmas. Crumble a block of stilton in a bowl and mix with cream cheese, toasted walnuts and garlic, a splash of port wine and a drop of honey. Rather mix in a food blender or squash down with the back of spoon.

7. Cauliflower and Broccoli Cheese

This classic Christmas dish tastes so much better from scratch, plus it’s incredibly quick and easy! Fry garlic and butter then add flour to make a paste and gradually add milk until you have a runny consistency. Pour over the broccoli and cauliflower in an ovenproof dish and top with cheese and breadcrumbs.

8. Sweet Potato Sausage-Less Rolls

Roast the sweet potato until soft and then mash and leave to one side. In a pan cook spinach, onions and garlic in butter until wilted and then mix all the ingredients together and lay out on puff pastry. Top with goats cheese and brush with egg, then cook in the oven for 15 minutes.
