3 ways to use Pomegranate this Festive Season
Pomegranate is considered to be a superfood - both in terms of the sweet, sour and bitter flavour andit improves digestion and overcomes nausea. Perfect for adding into a Christmas dish and cutting through some of the super rich foods you'll be eating.
1. Pomegranate Seeds in Stuffing - perfect for those new to pomegranate. Add a handful of pomegranate seeds into the stuffing mix that you are making (aim for roughly 5% of the mixture to be pomegranate seeds). This will add a lot of the benefits of the pomegranate but shouldn't alter the flavour other than adding a little bit of texture and sweetness.
2. Pomegranate Juice in Cranberry Sauce - for this recipe, simply add an even amount of pomegranate juice to cranberries and boil (with a little sugar, lemon zest, orange juice and salt) until it has caramelised into a thick sauce. The pomegranate will add just a little sweetness to the cranberries and you can always keep your pomegranate seeds and add them in once cooked for a little more texture.
3. Pomegranate Salad - I think this would be a great idea for boxing day. To make this, simply wilt down spinach or watercress and then add pomegranate pieces which have been gently warmed in a pan. From here, add whatever you have - pine nuts, a little turkey or ham or just have as a side with the rest of your leftovers.
