Kulfi a Rich Indian Ice Cream : Kesar Kulfi

Ingredients:

  • ½ tsp cornflour
  • 2 tbsp full fat milk
  • 200ml evaporated milk
  • 200ml condensed milk
  • 200g double cream
  • 150g almond powder
  • 10 almond kernels blanched
  • and cut into thin slices
  • 6 drops of Saffron Milk Masala Spice Drops
  • 3 drops of Cardamom Spice Drops


Preparation:

Mix the cornflour with the milk and set aside. In a saucepan, heat the
evaporated milk and bring to the boil. Add the condensed milk, double cream, almond
powder and the cornflour mixture and stir well for one minute, on low flame. Remove
from the heat. Once the mixture has cooled down add the Spice Drops®. Place the
creamy mixture in a food processor or use a hand blender and blend for a couple of
minutes to smooth out any lumps. Pour into disposable plastic cups and freeze for at
least six hours or overnight until the kulfi is quite firm. You simply have to cut the plastic
cup to get the kulfi out. Garnish with the almond flakes and enjoy!
