Pistachio Kulfi: A Rich Indian Ice Cream

Pistachio Kulfi is a magnificent dessert to make at home. You just need to be equipped with the right Spice Drops!

Ingredients:

  • ½ tsp cornflour
  • 2 tbsp milk
  • 200ml evaporated milk
  • 200ml condensed milk
  • 200g double cream
  • 150g almond powder
  • 10 pistachio kernels cut into slivers
  • 6 drops of Saffron Spice Drops
  • 6 drops of Cardamom Spice Drops
  • 6-8 drops of green food colouring

Preparation:

Mix the cornflour with the milk and set aside. In a saucepan, heat the
evaporated milk and bring to the boil. Add the condensed milk, double cream, almond
powder, pistachio and the cornflour mixture and stir well for one minute. Remove from
the heat. Once the mixture has cooled down add the Spice Drops® and the food colour.
Place the creamy mixture in a food processor or use a hand blender and blend for a
couple of minutes to smooth out any lumps. Pour into disposable plastic cups and freeze
for at least six hours or overnight until the kulfi is quite firm. You simply have to cut the
plastic cup to get the kulfi out. Garnish with the almond flakes and enjoy!
