Spiced Beetroot and Sweet Potato Tea Bread

For those times when you want something comforting and intensely satisfying, you can't go wrong with this delicately spiced Beetroot and Sweet Potato Tea Bread. The beetroot and sweet potato (both packed with essential vitamins and minerals) mean you can feel good about enjoying this bake at any time of year. Whether you choose to serve with extra golden syrup and butter...well, that's up to you!
Ingredients:
- 400g fresh beetroot, grated
- 200g sweet potato, grated
- 1tbsp lemon juice
- 120 g unsalted butter
- 70 g of muscovado sugar
- 200g golden syrup
- 300g self-raising white flour
- 1 ½ tsp baking powder
- 5 drops of nutmeg Spice Drops (or 1/2 tsp ground nutmeg)
- 5 drops of clove spice Drops (or 1/2 tsp ground cloves)
- 1 large egg
Method:
- Grease and line a 2 pint loaf tin.
- Mix the grated beetroot and sweet potato, and add the lemon juice.
- Put the butter, sugar and syrup in a saucepan and heat untilmelted: cool slightly.
- Sift the flour and baking powder into a bowl, then add the syrup mixture and egg. Add the Spice Drops® or ground spices, and stir till combined well. Stir in the grated mixture and mix well until evenly combined.
- Turn into the prepared loaf tin and bake at 170 degrees for 1- 1 1/2 hours until just firm and a skewer inserted into the centre comes out clean. Let it cool before slicing.
To add more depth to the flavours you can add golden syrup infused with ginger Spice Drops® on the tea bread.
