Honey Nut Granola

I was never a massive fan of breakfast. Don't get me wrong, I never skipped it, with out breakfast you might as well lock me in cupboard for the day. But I was never exactly rivited by the choice, toast or cereal. Both seemed plain and unexciting to me. 

But then I began creating my own and well, lets just say I am now a maoussive breakfast fan. I take pleasure in the Sunday evening ritual of making my breakfast up for the week; stewing my fruit with a pinch of cadarmon (cardomon is a natural calming spice, so a perfect note to start the day on), baking a batch of granola with whatever goodies I choose, maybe sometimes soaking some oats in almond milk with juicy raisens to create the ultimate bircher museli (recipe on the website) or even occasionally getting some healthy delcious banana & blueberry pancakes on the go. Whatever it is I always suprise myself in how much breakfast can truely a meal that holds it's own. 

Of course the massive plus points are that making your own breakfast can be a much healthier way to start the day and this granola recipe is the perfect example. The main ingredients being oats and nuts means your filling your boots with protien and calcium plus boosting your brain with energising minerals and mood enhancing molecules. My prefered way to serve it is with almond milk and stewed fruit but i'm sure there's plenty of other delicious accompaniments to this lovely morning dish. 

 

Ingredients

  • 100g rolled whole oats
  • 3 tbsp of almond butter
  • 50g pecans
  • 50g brazil nuts
  • Handful of pumpkin seeds
  • 4 tbsp honey
  • 3 tbsp coconut oil
  • 1 tsp cinnamon
  • Handful of sultanas or raisins

Method

  • Preheat oven to 190 degrees
  • In a microwave proof bowl put the coconut oil, almond butter and honey; melt it in microwave for 40 seconds
  • Chop the brazil nuts and pecans into little pieces, or blitz briefly in the processor ensuring there are still chunks of nuts left in the mix
  • Mix the nuts with the pumpkin seeds, oats and cinnamon in a bowl with the melted ingredients
  • Evenly spread the mixture over a baking tray
  • Place in oven and bake for 5 minutes before using a spoon to mix it all, ensuring all the ingredients get an even bake. Place back in the oven and bake for another 5 minutes.
  • Check it's all gone a lovely golden colour. If it needs a little more time pop it back in the oven but ensure you keep checking it as it can burn quite quickly.
  • Once you've removed it from the oven mix the raisins or sultanas through the oats and leave to cool. Then scoop it all into an air tight container until your ready to devour.
