Vegan & Gluten-Free Vanilla Protein Waffles with Poached Apple

These vanilla protein waffles are a delicious vegan and gluten-free breakfast that not only tastes good but is super nutritious and full of ingredients that will give you energy all morning. I usually have my waffles served with lots of berries, nut butter and syrup (maple, rice or date syrup are the best!) but yesterday I decided to go a bit crazy and have poached apple. The result? A plate of pure breakfast joy. Very sweet apples such as Pink Lady apples are best for this as you don't need to use any additional sweeteners. Of course you don't have to have the apple with your waffles if you're running a bit low on time or simply can't be bothered (this is usually the case for me) but it's highly recommended, trust me.

 

Ingredients
(Serves 1 - makes 1 waffle)

  • 2 flax eggs (2 tbsp ground flaxseed and 4 tbsp water)
  • 1 apple 
  • 1/2 cup (50g) rice/buckwheat flour (or a gluten-free plain flour blend) 
  • 2 tbsp vegan vanilla protein powder 
  • 1 tsp baking powder
  • 1 tbsp coconut sugar 
  • 1/4 cup (60ml) non-dairy milk


Method


Make the flax eggs by mixing the ground flaxseed and the water in a small cup. Set aside.

Peel your apple and chop it into bite size chunks. Add the chunks of apple into a small pan of boiling water and let them simmer for about 10 minutes.


After the apple chunks have been simmering for about 5 minutes, preheat your waffle maker - I use setting 2 on mine which is the equivalent of 2 minutes preheating time and 2 minutes cooking time.


Add the flour, baking powder, coconut sugar and vanilla protein powder into a mixing bowl and stir them together. Mix in the milk and flax eggs. The batter should be very thick at this point.


Once your waffle maker has preheated (mine beeps to tell me it's ready!) pour the mixture into it, close the lid and leave it to cook for a couple of minutes (again, mine beeps once it's done).


Once cooked, remove the waffle and drain the water from the pan. Serve the waffle with the poached apple and whatever else you like - enjoy!
