Tropical Summer Smoothie
We've been taking a leaf Lee Watson’s book Peace and Parsnips this week, and whipping up some of his healthy drink recipes. With a smoothie to suit pretty much every season, we thought we’d share our version of his Mango, Coconut and Lime treat!
Packed full of sweet tropical flavours, this is one to cool you down on those chilled out summer days. The coconut water is great for hydrating our bodies and replacing lost sugars after a long day. Mango and apples are full of healthy antioxidants. Chia seeds? Well, there isn’t much they don’t do! These powerful little seeds are rammed with protein, omega-3, fibre and nutrients.
With no further ado, here's a Tropical Summer Smoothie for you. Enjoy!
Ingredients:
1 Large peeled and chopped mango
2 green apples
1 frozen banana
Juice of one lime
225ml of coconut water
1 tbsp cacao nibs
Method:
Chop up the fruit and whizz in the blender until smooth. Stir in the chia seeds afterwards for added crunch and taste! If you don’t want to use coconut water, you could swap it for coconut milk instead. If it's a little thick for your liking, add some water or ice.
