Vitamin K rich Summer Recipes

Vitamin K is a much needed and yet often forgotten about Vitamin which can control blood clotting, remove calcium build-up in arteries and can prevent osteoarthritis. 

Below are three perfect for summer recipes building in green vegetables:

- Courgettini: the spaghetti/pasta replacement made from courgette is a great way to add in some extra Vitamin K. Courgette pasta is now available in high street supermarkets and is a great and easy way to add in more nutrients to a pasta dish. 

- Sauteed spinach: best served warm, simply cook spinach lightly in olive oil until it is wilted. At this point, you can add in pine nuts, bacon, mushrooms or other vegetables to make a perfect accompniment to summer dishes. For an extra Vitamin K boost, cook in soybean oil instead of olive oil. 

- Grilled broccoli: amazingly, broccoli on a BBQ does work. Simply spritz lightly with water (with a little salt for flavour, if you'd like) and grill until warm and just slightly singed on the edges. A healthy alternative when BBQing.
