Summer Rice Salad
Whilst pasta can leave some of us feeling bloated, rice tends to be a safer, more filling option. This summer rice salad (served cool) is a perfect alternative if you get bored of pasta.
- To start, chop a medley of vegetables and then saute in a little olive oil until soft. I like using peppers, courgettes and peas but this is completely up to you like.
- Whilst the vegetables are softening, boil rice (any rice works so make sure you use the instructions on the packet).
- Once the rice and the vegetables are cooked, add both together into a large pan and stir. Add a tin of tomatoes, tomato puree and herbs to taste. Now add 500ml of water and leave to simmer for around 90 minutes, stirring every 30.
- This can be eaten hot, as a side dish, or can be chilled in the fridge and eaten cold - it works perfectly at a BBQ.
