How To Make Cheese

We admit. We can’t imagine a world without cheese. Cheese makes everything better - sandwiches, pasta, chips… even waffles. If you’re as enthusiastic about it as we are, you might have wondered how cheese is made, or even entertained the thought of making your own cheese at home.

Cheese is thought to date back to 8000 BC, when sheep were first domesticated. Its discovery might have been entirely accidental, probably occurring naturally as milk was transported in heat without refrigeration, forming curds. Making it ourselves can’t be that hard then, can it?

We’ve read some of the best cheese recipes and guides out there, some put together by our incredible cheese makers, and compiled a list of steps to help you make your own cheese from scratch. 

How to make your own cheese

Ingredients

4L of milk (whole milk if possible)

1/2 cup buttermilk or 2 tbsp distilled white vinegar or lemon juice

Salt (to taste)

Herbs (to taste)

Method

Step 1 - Heat

Slowly bring the milk to a boil on the stovetop

Step 2 - Acid

Just when the milk starts to boil (look for bubbles around the edge) add the buttermilk, distilled white vinegar or lemon juice

Step 3 - Curds

Take the milk off the heat and wait until the whey (liquid) and the curds separate fully. This can take up to 20 minutes

(Tip: The longer you cook, the drier your cheese will be)

Step 4 - Strain

Once the milk has divided, pour it into a strainer lined with cheesecloth or a clean towel over a large bowl

(Tip: Washing the curds will remove more whey, resulting in milder cheese)

Step 5 - Salt

After draining the curds (you can squeeze out more liquid through the cheesecloth or towel for firmer cheese), add the salt and herbs to taste
