The Best Cheeses to Cook with by the Cheese Experts

This article was strictly made for cheese lovers, by cheese lovers. Two of our most talented cheesemakers share their favourite cheeses as well as instructions on how to create perfect cheese dishes and ‘wow’ your guests (and yourself).

The Chuckling Cheese Company was founded by cheesemakers Emma and Stuart Colclough and sells cheese that their family produces across the country, while attending a variety of events such as The Good Food Shows, Chilli Festivals, and Country Shows. Their award-winning cheeses are widely known across the UK - you might have seen their popular truffle-infused varieties or their best-selling heart-shaped cheddar.

Baked Camembert
This recipe was shared by David, expert cheesemonger at Curds & Whey, who’s a loyal Camembert fan.
Raymond Blanc once said “Tunworth is the best Camembert in the world", and he was right. Tunworth Camembert Cheese is an award winning cheese made in Hampshire by Stacey Hedges. The flavour is vegetal with earthy mushroom notes on the rind.
Here’s how to bake it, according to David:
Per-heat your oven to 200°C/180°C fan/ Gas Mark 6.
Remove the cheese from its wrapping and discard the lid, palace the cheese back in the wooden box, cut a cross in the centre of the Tunworth.
Bake in the wooden box for 20/25 minutes until soft and gooey
Drizzle with truffle honey serve immediately with lots of crusty bread.
Baked Goat’s Cheese Salad
Who doesn’t love a warm goat’s cheese salad? Especially with this salad recipe for 2 by The Great British Charcuterie Company.
Dorstone cheese is perfect for this recipe. Dorstone is made in Herefordshire and is a classic French style goat's cheese coated in salted charcoal. It has mousse-like texture and the flavour is clean and fresh, but when grilled becomes unctuous!
Cut six rounds of sourdough bread to serve 2 people. Slice the Dorstone into 6 rounds, and place on bread, drizzle with olive oil and bake in a pre-heated oven 200°C/Gas Mark 6 for 5 or 10 minutes or place under the grill until it starts to caramelise.
Place three of the goat's cheese on each prepared salad and drizzle with balsamic.
(If Dorstone is not available, then Golden Cross is a great alternative.)
Hot & Garlic Cheesy Pasta
Use the Hot & Garlic Cheddar by The Chuckling Cheese Company as it’s the perfect cheddar to add to your favourite pasta dish because it boosts both the heat and the flavour! They recommend grating some into your pasta and mixing it, and then topping your dish with some more.
Cheesy Toast or Cheesy Garlic Bread
The Chuckling Cheese Company shared their Flamin Hot on Toast! Recipe. They recommend using their Flamin Heart Chilli Cheddar for melting on toasted sourdough. Opt for a hearty slice of sourdough and you’ll really be able to taste this wonderful, spicy cheese melting through!
Create your very own garlic bread using The Chuckling Cheese Company’s Garlic & Chive Cheddar simply melted on top of the bread for a flavour explosion. (A great treat served alonside the Hot & Garlic Cheesy Pasta mentioned above!)
Cheese Based Sauces
Make the perfect cheese sauce with a good Traditional West Country Farmhouse Cheddar such as a Montgomery Cheddar produced in Somerset. For an extra kick add a sprinkle of Parmigiano Reggiano, or a good blue like the Colston Bassett Stilton which works well with the cheddar.
For a peppery cheese sauce, use The Chuckling Cheese Company Shepard’s Purse Yorkshire Blue Cheese or curate your own cheesy peppercorn sauce with the Black Pepper Cheddar Barrel. Whether it’s to drizzle over steak, chicken, or used as a dip, these cheeses make wonderful sauces that are full of flavour.
