What is Sous Vide Cooking?

So, what’s sous vide cooking?

Sous vide includes any kind of cooking that occurs in a temperature controlled water bath. 

What does this mean? As per its name, sous vide cooking entails that food is placed in vacuum-sealed bags before being submerged in water that’s at a specific and consistent temperature. We’ve asked one of our expert talented makers, Charlie, Founder and Director of Sou-Chef, to explain sous vide cooking for us in simple terms, as he personally assembles ready to cook meals using the sous vide method. 

Why do you use sous vide cooking?

“Sous Vide cooking is the process of using vacuum packed bags to slowly cook ingredients in a precise temperature-controlled water bath. This water-based cooking technique retains the juices and aroma of the food that is usually lost during the traditional cooking process and allows you to quickly reheat and produce consistent restaurant quality food.”

Sous vide cooking meat means that very little, if any, fat is added into the sealed bags and so the meat cooks in its own juices, leaving the food moist, juicy and tender. 

Charlie’s inspiration was to provide restaurant quality precooked meal kits and deliver them directly to people's homes across the UK. He aimed to create meal kits that are simple to cook at home using step-by-step, easy instructions, hence why everything is cooked and prepared sous vide.
