Stop The Crumbling

Veggie burgers are significantly lower in fat than their meaty cousins. For this reason, they need a bit of extra help to keep them moist and stuck together. To stop homemade veggie burgers from crumbling and falling apart, use egg to bind the ingredients together. You can also use flour (tapioca flour is great) to remove excess water from any vegetables or beans you might be using. Try not to turn your veggie burgers too many times when cooking, as that's another sure-fire way to turn them into a quivering, crumbling mess. 

Go For Bold Flavours

Many veggie burgers lack strong and tasty flavours to keep us hooked - yes, we’re talking to you frozen veggie ‘turkey’ burgers! Don’t be afraid to add plenty of herbs, spices and a kick of chilli to intensify the flavour. We add minced onion and garlic to almost any burger. Garam masala goes well with chickpeas and lentils, while Harrisa is the perfect partner for buttenut squash and sweet potatoes. 

Stop Them Sticking

If you’re planning to barbecue your homemade veggie burger, it's going to need some extra grease. Homemade veggie burgers lack grease and fat like the normal meat varieties so they need a little help. Brush them with olive oil or rapeseed oil before cooking to stop them sticking and breaking. Shallow frying is often the best way to cook your homemade veggie burger indoors - dab on kitchen paper afterwards if you're concerned about the grease.

It’s All About The Extras 

If you’ve squeezed all you can into the actual burger, it’s now time to get inventive with the toppings. Forget iceberg lettuce and mayo, we’re thinking sundried tomatoes, sliced avocado, rocket and caramelised onion chutney (homemade of course!). Take a step back from bland cheddar cheese and make a low fat swap for mozzarella or feta, or be brave and melt on some stilton! We love homemade chilli relish, and jalapenos are always a good idea.
