What to Do With: Broad Beans

If you're not sure what to do with broad beans, you're definitely not alone! They're not in season for very long, so lots of us have never cooked with them. But don't let this put you off. Broad beans are not only packed with protein, fibre and B vitamins (making them especially valuable for vegetarians), they're incredibly versatile too. 

If you're lucky enough to find fresh broad beans at your local market or in the supermarket, here are some delicious ideas: 

  • Broad beans and white, soft cheeses make for a brilliant taste combination! Toss together in a salad, on bruschetta, in pasta or on toasted sourdough bread. We particularly love broad beans and feta - this works great in a frittata too. 

 

  • Saute de-shelled broad beans in a pan with tomatoes, chopped herbs and anchovies. Serve with pasta, on toast, or eat it straight from the pan! Seriously, it's hard not to - this tastes so good. 

 

  • Broad beans make an excellent partner for meat. Try marinated lamb chops with crushed broad beans, or broad beans with bacon in a salad. 

 

  • Peas and broad beans may look similar, but they taste different and make a really great team. Try making broad bean and pea hummus by whizzing-up cooked broad beans, peas, garlic, olive oil and lemon juice for a creamy dip. Be careful not to overcook the peans and beans first. 

 

  • Start the day with a super protein-filled breakfast or brunch with a broad bean omelette. Eggs are full of nutrients and protein - adding broad beans will make you feel energized for longer and less likely to snack in between meals. Simmer the beans until tender, drain and run under cold water, then simply pop them out of their thick green skin and fry them with your omelette.
