- Cremant De Loire from Domaine Bablut in France: Sparkling white wine from the Loire Valley. The domaine is owned by the Daviau family since 1546. The winemaker Chistophe Daviau’s philosophy is the harmony between terroir and grape variety, the vine being in harmony with the land where it grows and the environment where it flourishes. In 1993, a biodynamic test in the vineyard lead to the conversion to organic farming of the entire vineyard in 1996 out of respect for the plant, the terroir, the rivers, their staff and the consumer. The grapes are picked by hand and there has been no artificial sprays or chemicals used in the vineyard. Made in small quantities. You will taste the difference in quality with fine bubbles.Pair with: soft and hard cheese, smoked salmon and pâté would work well. 12.5% abv.
- Avi Ton Xarello from Eudald Massaya Noya in Penedes, Spain: The Xarello grapes are from vines which are over 60 years old and Eudald Massana Noya do not make very many bottles a year. The wine is a homage to the wine makers Father and Grandfather of his children from whom its gets its name.Pale gold in the glass with a nice floral aroma on the nose combined with some lovely ripe stone and tropical fruit. Aged in chestnut oak barrels for three months which gives it a lovely length, a slight toast and medium body. A great wine from a small producer. Pair with: Hardened cheese, sushi or cod. 14% abv.
- Pinot Noir from Weingut Feth in Rheinhessen, Germany: Florian Feth is a winemaker from Rheinhessen in north western Germany. He makes his wine using sustainable vineyard practices and is a certified bio-dynamic wine producer. Florian’s wines are also 100% vegan. Feth Pinot Noir is a fine example of high quality pinot noir for Germany . On the nose you will experience intense blackcurrant and cassis along with a hint of liquorice. In the mouth it is much the same with a fine peppery undertone and subtle tannins. Pair: with a pan fried pepper steak and roasted root vegetables. 13% abv.
All wines are standard size 75cl bottles.
Organic wines are better for the environment as the winemaker does not spray artificial herbicides and pesticides in the vineyard to control pests and weeds. Instead, the winemaker will use more natural methods like having ducks, geese and sheep to eat the weeds and position other plants throughout the vineyard which bugs and insects prefer to the wine grapes.
