- Blaufränkisch from Bauer Pöltl in Burgerland, Austria (Organic): Bauer Pöltl are organic wine farmers from Horitschon in Austria. Their wines are made by hand, believing in the concept of terrior, where the wines are a true reflection of the soil, region and surrounding eco system. Daniel and Kathi work with nature and have seen the quality of their wines increase over time as they work with nature, as opposed to trying to control it with synthetic fertilizers and herbicides.This wine is made from 100% Blaufränkisch, a native grape variety of Austria and their second most planted red grape behind Zweigelt. Expect a lovely nose full of fresh red currants and some plum and blackberry, with a slight hint of sweet spice from the oak. On the palate its combined freshness of red fruits combined with a good body and great secondary aromas from the French oak.Pair with: Lamb and sage sausages, sweet potato mash and a garden salad. 12.5%.
- Pinot Noir from Weingut Feth in Rheinhessen, Germany (Biodynamic): Florian Feth is a winemaker from Rheinhessen in north western Germany. He makes his wine using sustainable vineyard practices and is a certified bio-dynamic wine producer. Florian’s wines are also 100% vegan. Feth Pinot Noir is a fine example of high quality pinot noir for Germany . On the nose you will experience intense blackcurrant and cassis along with a hint of liquorice. In the mouth it is much the same with a fine peppery undertone and subtle tannins. In Germany they call Pinot Noir ‘SPÄTBURGUNDER’. This translates to late Burgundy, or late ripening burgundy in English.Pair Weingut Feth’s Pinot Noir with a pan fried pepper steak and roasted root vegetables. 13% abv.
- Garnacha from Bodegas Tempore in Aragon, Spain (Organic): A lovely organic red wine from Aragon in Spain. The family owned Bodegas Tempore vineyard is about 90 minutes north west of Barcelona on route to Rioja in a small Spanish wine region called Bajo Aragon DO. Garnacha is the most widely planted red grape variety in Spain, where it comes from originally, but also has more land planted to vines than any other in the world.This 100% Garnacha has enticing aromas of strawberry, plum, violets and sweet spice. In your mouth it will be a direct translation of the aromas with fresh strawberry, black cherry and plum. There is a nice peppery undertone which you will often find with the Grenache grape.Pair this with slow cooked lamb shanks and a creamy potato mash. 13.5% abv.

Organic wines are better for the environment as the winemaker does not spray artificial herbicides and pesticides in the vineyard to control pests and weeds. Instead, the winemaker will use more natural methods like having ducks, geese and sheep to eat the weeds and position other plants throughout the vineyard which bugs and insects prefer to the wine grapes.
