Tellicherry black peppercorns, toasted gentley to release their oils before being combined with fresh garlic. The result is a subtle, traditional flavour. Not too garlicy and just the right amount of pepper.

Red Wine & Draycott Blue Cheese Salami Great Taste Award Winner, Taste of the West Gold)
We have taken a traditional Italian salami recipe, removed the red wine and local spices and replaced them with sage, mustard and local cider. The result is a totally unique salami flavour that has a West Country signature.
