Dried Limes – a staple of Iranian cooking. Use a skewer to puncture them before adding to a tagine or drop a couple into the cooking liquid for rice for a stunning hint of fruit. Try grinding into a powder and sprinkling over meat or grain salads too.
Saffron – with a honeyed, almost floral smell, a little goes a long way with this spice. Add to bread, cakes, curries and soups for a golden red colour and beautiful aromas.
Barberries – dried red jewels with a delicious tart flavour. Sprinkle over chicken, stir into rice and couscous or mix with almonds, onions and coriander for a fragrant roast lamb stuffing.
Sumac – Pure sumac or sumach (which means there’s no added salt) boosts the tartness of lemon juice. Use on its own or mix with fresh thyme and sesame seeds for a delicious marinade.
Pomegranate Molasses – Made with 100% pomegranate juice, this thick, ruby-coloured syrup has a sweet favour with a fruity, tart kick.
Rose Petals – Edible rose petals are used throughout the Middle East, adding their delicate floral notes to sweet and savoury recipes.
