They make their vinegars following an age old process where natural produce is transformed through two fermentations into a complex tasting wine vinegar where sweet and sour is in perfect balance.

They take seasonal produce (grown, foraged or bought from local farms) and make alcohol, then ferment again 9 months later into vinegar. It’s a 12 to 18 month process. The resulting vinegars are deep and complex in flavour. Available in 12 seasonal flavours.
